Mini  BBQ Rice  Meatloaves

These mini-sized meatloaves are made with turkey and brown rice for a tasty, good-for-you meal!

1 pound 93% lean ground turkey
4 ounces shredded sharp cheddar
12 fat-free, low-sodium saltine crackers, finely crushed
½ cup finely chopped onion
½ cup finely chopped carrot
2 large eggs
½ cup ketchup (no salt added)
Cooking spray
¼ cup BBQ sauce


  1. Preheat oven to 350°F.
  2. Combine the ground turkey, rice, shredded sharp cheddar, crushed saltine crackers, chopped onion, chopped carrot, 2 large eggs and ketchup in a large bowl.
  3. Spoon the meat mixture into 12 muffin cups lightly coated with cooking spray. Brush each mini loaf with BBQ sauce.
  4. Bake at 350°F for 20 minutes. Let stand for 5 minutes. Remove from pan.
